It’s Fall Y’all + Pumpkin Pancake Recipe

  It’s official:  I am a Texan.  The evidence:

1 – When I flip through the radio stations as I’m driving, I won’t automatically switch stations if a country song is on.

2 – Yesterday at the pumpkin patch several women were wearing cowboy boots and I thought, “those might look nice on me…”

3 – Sometimes I will spontaneously say, “y’all.”

(Don’t worry – I still have Jersey Girl attitude.)

Yesterday we went to Sweet Berry Farm in Marble Falls and had a blast!  We’ve been going to their pumpkin patch since moving to Austin three years ago.  We took Rylee’s friend, Lexi, and met up with my BFF, Regina, and her family and brother’s family.

They have hay rides, pumpkin painting, horseback riding, a petting zoo (mostly goats,) barrel train rides, picnic area, stuff a scarecrow and a corn maze, among other things.  Each year it has gotten bigger and better.

It’s a really fun way to spend a Saturday afternoon.  Going to a pumpkin patch…It’s those little traditions that make life so sweet, yes?

While everyone else ate their hot dogs and hamburgers you will be proud to note that I stuck to my diet and ate turkey, brown rice and broccoli from home and some water.   In honor of our Halloween outing, here is a clean eating recipe for pumpkin pancakes.  (It’s Daniel’s recipe, actually.  Y’all know I can’t cook!)

Pumpkin Pancakes

  • 1/4 cup organic canned pumpkin or sweet potato
  • 1/4 cup oatmeal
  • 2 packets Stevia
  • 3 egg whites
  • Cinnamon, pumpkin spice to taste
  • Mix all in a blender and use as pancake batter

It’s SOOO good!!!

  1. Fall isn’t Fall since we moved to FL from NJ. Maybe that Pumpkin Pancake recipe will help set the mood. Don’t even get me started on Christmas. lol
