The Great Chip Dilemma

PringlesThe joy of Operation Incredible Bulk is that I get two cheat meals per week.  The reality of that is I squander my cheat meals on stupid things like chocolate (wait, chocolate is never a stupid choice) potato chips and dip instead of holding out for a really good cheat like lobster bisque or a glass of wine.  Ultimately, I need to upgrade my cheats.

Here’s my dilemma with that:  Football.  My man loves his football and you can’t possibly watch a game without chips and dip, right?  So there are chips in my pantry and dip in my fridge and when everyone in my family eats them I feel like a dork munching on salad.

“But that’s an excuse!” said my trainer’s voice in my head, so today I broke down and tried making kale chips.  Katie on my team swears by them.  I was dubious but I really want lobster bisque this week (or wine.  or chocolate.) so I’m giving kale chips a try and am hoping that they taste like Pringles.

  1. Preheat oven to 275 degrees.
  2. Spray cookie sheet with 0 calorie butter spray.
  3. Select your desired amount of kale.  (Fearing that it would taste bad I just went with one very big leaf.)
  4. Rip the kale into chip size and place them on the cookie sheet.  (I threw away the stem of the leaf and just ripped around it.)
  5. Spray them with butter spray and sprinkle with sea salt.  (Some of the girls on the team also like Julio’s seasoning, but I didn’t have any in my pantry).
  6. Bake for 25 minutes.

Warning – the first minute they are in the oven it STINKS!  It smells like three-day-old sea weed.  This was not encouraging me to want to put this in my mouth…I took it out of the oven and it didn’t look much better.  It look shriveled up.  I don’t want to try this.  F#$% football!  OK, let me talk myself into this.  If I can drink egg whites  and eat bison burgers I can take a taste of kale chips.

But first I ask my kids to try them.  “Hey kids, who wants to try a kale chip?”  “No!  No!  Run!”  They hid under the pillows on the couch.  Scaredy cats.  “Rylee, I’ll give you a quarter if you try one,” I sang sweetly. “No.”  “Fifty cents?”  “No.”  “A dollar?”  “No.”  “Come on!  You’re turning down a dollar!?!”  “I’ll need more to try that.”

Humpf.  Fine.  I’ll try them…

And I will eat kale chips on a boat!  I will eat them with a goat!  I will eat them while watching TV!  Because they are non-fat and nearly calorie free!  I LOVE kale chips so much I will eat them all alone!  Thank you, thank you! for your recipe, Katie Stone!
