Spinach Tomato Pesto Pizza

If you are my trainer, please don’t read this.  Know why?  Because I had a slice of this pizza last night and it was AWESOME!!!  (And not on my sugar detox diet.  Shh!!!  Don’t rat me out!)  This is the first “clean” pizza I ate that actually tasted good!

You can’t get more “kids food” than pizza, and this is a terrific recipe I found online.  Here is the link: cleaneatingonline.com.   The kids helped me to prepare it, so it was a fun project as well as healthy and it didn’t take long to prepare.  We were out of walnuts, so we skipped that but everything else was in there.

Ingredients:

Instructions:

Put garlic in a food processor and mince. Add spinach, basil, nuts and Parmesan. Puree. Slowly add olive oil and scrape down sides of bowl as needed. Salt to taste.  (We didn’t add any salt.)

Preheat oven to 425 degrees. On a floured surface, roll out pizza dough into one large pizza or cut off a few pieces and roll out small individual pizzas.

Spread with about three fourths of the spinach basil pesto and top with mozzarella cheese and tomato.

Bake for 10 – 12 minutes until cheese has melted and crust is browned. Makes 6 servings.
