Weekend experiments + recipe
Oh snap! Double experiment time: Cooking AND organizing! I was standing in the checkout line, saw this magazine and had to get it:
I took the organizing personality test, and apparently I am a “Tidy Trish” with undertones of “Social Sally,” which in a nutshell means I’ve got clutter that’s driving me nuts. The biggest tip I’m trying out is to commit two days per room/area so I don’t start and then quit partway through. (I’m notorious for getting distracted by shiny new projects before completing the current one.) We shall see how this goes!
Next…cooking experiment. Ya’ll know how much I love/hate eating fish, so I found a good mix of veggies, citrus and spices to make my tilapia taste less fishy. Here is my recipe:
Fiesta Lime Tilapia
Ingredients
- Tilapia
- Red peppers – 1/2 cup
- Onions – 1/4 cup
- Lime juice – 1/4 cup
- Mrs. Dash Fiesta Lime
- Salt and pepper
Directions:
- Slice up red peppers and onions. Put them in a food processor, along with 1/4 cup lime juice and blend until everything is chunky.
- Rinse your tilapia, lightly salt and pepper and sprinkle Mrs. Dash Fiesta Lime on both sides.
- Spray your pan with nonstick spray. Spoon the pepper-lime mixture beneath each fillet and then spoon the remaining mixture on top. Cook on medium heat until both sides of the fish are white.
Makes 4 servings. I paired it with green beans and put some extra pepper slices in there to make it look fancier.
