Kitchen Experiment #1 – Obidia’s Egg Muffins

Eggs on plateCatholic school requires that all students wear a uniform.  The reasoning behind this is if everybody looks the same, pupils will be less distracted by fashion and better able to focus on studies…Yeah, right!  As a fifteen-year-old Catholic school girl my sole mission in life was to make my uniform look anything but.  Every girl had to wear a gray or navy blue pleated skirt and white Oxford shirt.  Those were the rules.  Fine.  But there was nothing in the student handbook about accessories…

 

So I wore my gray pleated skirt along with 4″ black heels and my father’s tie through the Oxford shirt and red lipstick, just because.  And I got away with it, because I pushed the envelope while still maintaining the clothing requirements.

Sometimes “eating clean” reminds me of my uniform; it gets boring and monotonous.   Enter Obidia’s egg muffin recipe, which repackages the same ingredients into fun little mini quiches.  (FYI – Obidia is my workout buddy and, unlike me, actually knows how to cook things.)  Here’s her recipe:egg muffins

Obidia’s Egg Muffins

  • Preheat oven to 350 degrees
  • In a small bowl combine 1 egg and 4 egg whites (about 1 cup of egg whites) with a teaspoon of salt and pepper.  Set aside.
  • Spray a pan with butter substitute spray, then saute 1 cup of spinach until the leaves are wilted.
  • Add spinach to egg mixture and whisk.Whisk eggs
  • Pour in a muffin tin.
  • Bake at 350 degrees for 20 minutes
