Good News for Foodies!

Well, the foodies among you are going to be happy now, because I just got seven (count ’em) 7 new cookbooks!  I tried to get a wide variety of recipes ya’ll might light to try at home and the publisher, Robert Rose, is allowing me to print up a ton of the recipes to share.

The first one is 500 Best Quinoa Recipes by Camilla V. Saulsbury.  I already tried the Crisp Quinoa Chocolate Chunkers  recipe (of course) and it’s awesome!  But don’t take my word for it – see Little Henry’s enthusiasm.  Over the next month I will try out her Quinoa Almond Butter Blondies and the Black Bean Quinoa Chipotle Chili.

I know a lot of people with food allergies, so I’m pretty interested to dive into Alexandra Anca’s The Total Food Allergy Health and Diet Guide.  From there I’ll try out the Lemon Garlic Chicken, Baked Portobello Mushrooms and The Antioxidizer.

I have a crock pot that I use never, because I lost the cookbook that went with it when we moved from California to Texas.  But now that I have a copy of Best of Bridge Slow Cooker Cookbook, I’m ready to dust it off and start stewing.  I’m going to try out the Beef Goulash and Apple Cranberry Cake.  I love beef goulash, so that was a no-brainer, but honestly I never heard of making a cake in a slow cooker, so I’m going to try that out just for research…and because it’s cake.

One of the best parts of the Off Season is that I get more cheat meals.  For me, that means, among other things, soup.  Carla Snyder and Meredith Deeds’ 300 Sensational Soups looks pretty interesting.   I’m really curious to see how the African Peanut Soup will taste.  Also, I’m going to try Easy Chipotle Chicken Soup (mostly because the word “easy” is in the title and I’m new to cooking) and the Beef Stroganoff and Noodle Soup, because that’s one of my husband’s favorites.

Lemon Pepper Shirmp Pasta, Tagliatelle with Tarragon Lobster and Asparagus and Salmon, Spinach and Sweet Potato Frittata recipes will be tried out using Susan Sampson’s 200 Best Canned Fish & Seafood Recipes.  Let’s hear it for getting in your Omega 3‘s!

My mom used to have really bad arthritis so for her I’m reading Kim Arrey’s The Complete Arthritis Health, Diet Guide & Cookbook.   Not surprisingly there are a lot of salmon recipes, so we shall try Crab and Smoked Salmon Tea Sandwiches and Maple Ginger Salmon.

Finally, I wanted to broaden my culinary tastes a bit, so I’m trying out a book with a lot of Vegan and Vegetarian recipes, 250 Best Beans, Lentils & Tofu Recipes.  Caribbean Red Bean, Spinach and Potato Curry is a Vegan dish and Easy (there’s that word again) Chicken Tacos, which is neither Vegan nor Vegetarian but it says it is “Kid Friendly” so Ima give it a try.
