Yummy Chicken Wrap
The mission: Create a yummy lunch that balances protein, complex carbohydrates, healthy fat, and vegetables in a format that my anti-health-food mother will eat (and enjoy.) Mission Impossible? Never!
Behold the mighty chicken wrap.
Ingredients: Whole wheat roll up, 1/2 cup lettuce, 1/4 cup tomatoes, 1/4 of a small Haas avocado, 4 oz. grilled chicken (seasoned with pepper and parsley) and 1 tsp light mayonnaise (’cause you have to live a little).
I’m dating myself here, but when I was a kid there was a commercial for a healthy cereal two little boys sat at the kitchen table and neither one would try something healthy, so they gave it to Mikey, the youngest boy and everyone said, “He won’t try it, he hates everything.” And then little Mikey ate it happily and the boys were astounded. “He likes it! He really likes it! Hey Mikey!”
