Jazzy Cookbook and Vanilla Glazed Doughnut Recipe

As much as I’m a fan of clean eating, my kids sure aren’t.  When I try out recipes such as “spinach smoothies” and “kale chips” they don’t bother sugarcoating their feedback:  “Mommy, this is disgusting.”

But I’m not giving up!  On Instagram I follow a woman named Jasmine Schmalhaus (aka Jazzythings) who has written several e-cookbooks.  Her newest one is the Kid Approved Cookbook, retailing for $12, so I had to give it a try.KidApprovedCover

To get the kids excited about clean eating I told them that they could choose the recipe.  Would they choose the Hulk fries (made with zucchinis) or the whole wheat pizza?  Nope, my kids went straight to the dessert section and chose the vanilla glazed doughnuts recipe.

Fortunately, the cookbook takes standard childhood favorites (like pancakes, pizza and graham crackers) and offers up recipes made with clean ingredients.

Most of the recipes include standard ingredients you’d already have in your home (eggs, fruit, vegetables, seasonings, etc.); but not Vanilla Glazed Doughnuts.   No, for that I had to take a field trip to the healthy living aisle of our local grocery store.

I’m very happy to report that all the ingredients were there.  Now I can’t speak for all supermarkets across the states, but I’m willing to bet if I can find coconut sugar and almond flour at a supermarket in Pflugerville, Texas, they should be easy enough to find in other stores too.  (But just in case you can’t find the ingredients, she gives a website where you can buy them along with a discount code.)  The cost was less than $20 and I had tons left over for future recipes.

The doughnuts were really tasty and my kids had fun making them.  We didn’t have doughnut pans, so we improvised with muffin trays.  The babysitter tried them too and gave them a thumbs-up.

Vanilla Glazed Doughnuts

Ingredients

Doughnuts:

  • 1 1/4 cup almond flour
  • 1/4 cup coconut flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3 eggs

  • 2 tbsp melted coconut oil
  • 1/2 cup coconut sugar
  • 1 tsp vanilla
  • 1/4 cup almond milkHenry-pour-almond-milk

Glaze:

  • 1/4 cup coconut milk
  • 2 tbsp melted coconut oil
  • 1 tbsp honeyHenry-honey-glaze
  • 1/2 tsp vanilla

Directions:

  1. Combine all doughnut ingredients Rylee-spoon-mixing(add milk slowly – you want a batter that is similar to a cake batter so not too thick.)  Henry-mixing
  2. Pour into doughnut pan (they will rise a bit.)
  3. Bake at 350F for approximately 15 minutes (until toothpick comes out clean.)doughnuts-out-of-oven
  4. Combine all glaze ingredients.
  5. Coat doughnuts with glaze.  Top with sprinkles!

Jazzy Tips

  • Get creative with the flavors, if desired!  For a chocolate doughnut, simply add 1/3 cup cocoa powder, and increase the almond milk a bit.
  • Create cinnamon doughnuts by adding cinnamon to both the batter and the glaze.
